I’ve moved!

Just a quick note to say I’ve moved over to a new blog- tumblr’s been great but I’ve decided to change focus. I’ve finished uni and have more free time for longer and more frequent posts, and tumblr doesn’t really provde what I’m looking for now.

The new blog is going to be focused primarily on food, so if you share my passion for healthy + fun vegan food, come on over!

Check out the new blog here : http://coconutandberries.com/

Just a quick note to say I will be back! I’m in the middle of studying for my university finals which is why I have neglected this poor little tumblr.
I still manage to spend plenty of time reading other people’s blogs (ultimate revision procrastination) but don’t really feel I can justify posting myself right now.
I’ll be finished by the start of June when I’ll be free as a bird and plan to revive this page, or create something new which I’ll actually commit too- probably more food focused since I’ll have time for lots of fun in the kitchen again!
WATCH THIS SPACE!
p,s I’m actually surprisingly not too stressed right now, but thought this was pretty funny and wanted to share.

Finding Peace in Uncertainty

“FINDING PEACE WHEN YOU FEEL SCARED ABOUT WHAT MIGHT HAPPEN”

LIMBO IS NOT A BAD PLACE.

Instead of getting yourself all charged up about how a situation may or may not turn out, get comfortable in the space of not knowing. If you are someone who likes to know or control everything, this may be difficult to do—which is perfect. You now have an opportunity to see how good you can become at handling uncertainty.

TRY NOT TO WORRY.

Worrying is useless. It serves absolutely no purpose. The only time you can make a difference in your life is now. The past is gone & the future hasn’t happened yet. Don’t use your present time worrying about things you can’t control.

Make no mistake, planning is not worrying. Planning is when you lay down the steps needed to create a desired future. Worrying is when you stress out about something that has happened or hasn’t happened yet.

Instead of worrying, meditate, practice gratitude, become still, listen to your soul, & surround yourself with love.

NOTHING IS PERMANENT.

Nothing is permanent! Days become nights, the fall becomes the winter, babies are born, elders pass away, & wounds heal.

Whether you are sick, have a broken heart, or are just not in life where you want to be, know that whatever your predicament is, it will pass. Your life is not falling apart; it is falling into place.Your job is to take the pieces & put them together in a way that fulfills the highest expression of yourself.

IT IS OKAY TO BE AFRAID.

It doesn’t mean that you are weak. It takes a strong person to admit their fear. Sometimes acknowledging your fear can help you move past it enough to take the next step in your process, whatever that may be.

Maybe you want to start a business. Maybe you want to go back to school. Maybe you want to confront someone. Maybe you want to forgive them. Say “I’m afraid” & then get about the business of creating the life you want.

SURROUND YOURSELF WITH LOVE.

Let those close to you know what is going on in your life & how you feel about it. There is no need to carry the weight of a challenge on your own. Sometimes hearing others talk can shed light on what would otherwise be a bleak situation.

TAKE CARE OF YOURSELF.

Rest when you need to. Cry when you need to. Talk when you need to. Pray when you need to. And laugh when you need to.

YOU ARE ALWAYS GOING TO BE OKAY.

As long as you know that you are more than the stuff you own, more than what you think, more than the physical body you reside in, you are going to be okay, whether the predicament ends in the way that you want it to or not.

I read this article over at Vegenista this morning and had to share it. It’s so appropriate for me right now going through a scary transition period having just a few months left at university before going out into the big wide world.

Maybe the best is yet to come! xox

13 Simple Steps to Sanity (& Maybe Even Happiness).

Great advice as usual from elephant journal- Follow the link at the bottom for the full article…

1. Before you even crawl out of bed, decide to make today good.

2. Now that you’ve pried yourself from the hands of heaven, the next step to feeling on top of your shit is to make that bed.

3. Time for a treat.

4. Grab your favorite pen and notebook, and make yourself a to do list.

5. Do something off your list.

6: Make a conscious choice to enjoy whatever it is you have to do today.

7. Slow down! Ask yourself, do you really need to rush?

8. Smile, and mean it.

9. Do something nice for someone else without expecting anything in return.

10. Breathe.

11: Get outside.

12: Move your body.

13. Get some rest!

There are times to cultivate and create, when you nurture your world and give birth to new ideas and ventures. There are times of flourishing and abundance, when life feels in full bloom, energized and expanding. And there are times of fruition, when things come to an end. They have reached their climax and must be harvested before they begin to fade. And finally of course, there are times that are cold, and cutting and empty, times when the spring of new beginnings seems like a distant dream. Those rhythms in life are natural events. They weave into one another as day follows night, bringing, not messages of hope and fear, but messages of how things are.

Cacao

As promised I’m back with dessert. I haven’t only been eating chocolate desserts but I thought I’d share these first. I’m a huge fan of dark dark chocolate and make it raw and it’s even better.

I’ve enjoyed all of these raw chocolate delights recently and urge you to give them a try too. Click the pics for links to the recipes.

Raw Fudge Brownie Cups- Need to make these again soon, so fabulous. I love the texture contrast between the fudgy brownie and the smooth cacao coconut butter topping…

Raw Chocolate Coated Brazil + Raisin Discs- Super easy to whip up when you need your cacao fix. I’m going to mix things up next time and try different nuts and dried fruit-maybe pistachios and dried cherries or apricots?

Choco Maca Chia Smoothie- If you haven’t tried maca yet definitely use it in a smoothie. It’s got a “malty” taste which works perfectly with chocolate. The chia makes this extra thick (just how I like it)

Last but not least….

"Smooth Criminal" Chocolate Mousse Tartlets- If you’re not familiar with raw desserts then the main ingredient in this chocolate mousse may come as a surprise….Avocado! Yep, the avocado lends its creamy texture perfectly to this  mousse, its healthy fats far preferable to the more typical dairy chocolate mousse.

Rawkin’ Raw!

Been on a massive raw kick at the moment-just shows that raw food doesn’t have to be confined to the summer months as it’s been pretty wintry lately and I’ve still been enjoying some fabulous comforting and hearty meals.

I’ll share some of the savoury recipes I’ve enjoyed..(yes dessert will follow..but we all know we need our veggies too! )

Hope you’re inspired to try some raw dishes of your own

1. Broccoli Raisin Sunflower Seed Salad (A great, easy, everyday salad)

Tomato & Macadamia Mozzarella Linguine with Sweet Red Pepper Sauce (This is a little involved for regular, weeknight eating but it made me feel rather “gourmet”

Kale Waldorf Salad (Kale salads are fabulous and this is another to add to the repertoire)

Sprouted Lentil Salad with Courgette Flax Dressing (I loved this dressing, and appreciated that it is made with whole foods- vegetables and flax seeds instead of just a ton of oil.

Sprouted Hummus Courgette “Sandwiches” ( Self-explanatory)

Snacky Plate (Sprouted Hummus, Veggie Sticks, Homemade Salsa, Kale Crackers and Lots of Sprouts of different varieties :) )

P.S. I baked the crackers but you could definitely dehydrate them if you’re concerned about keeping their raw “status”

Soaked Lentil Chili (it’s not that pretty but add a little diced avocado on the top for a pop of green and a creamy contrast)

I’ll be back with dessert when I next get the chance…
